From Food Truck to Food Hall: The Big City Bites Story

Meet Mike and Sharon Nicholas, the husband-and-wife team behind Big City Bites Bistro, a new addition to The Bank food hall. What started as a vision to open a food truck has since blossomed into a thriving family-owned business serving up some of America’s most iconic dishes.

After a lengthy career in banking, Sharon recognized the growing influence of automation and decided it was time for a significant change. Mike decided to leave his job as well to help turn their dream into reality.
- In early 2018, they bought a food truck in Delaware and drove it back to North Carolina. They spent months retrofitting it to meet state codes and finally, in July, Big City Bites hit the road.

From the start, their truck became a hit in the local food scene, with their *Cubano* sandwich quickly becoming a fan favorite—so much so that it sells out daily. Another must-try item is their Buffalo Chicken Swirls, a dish that customers can’t get enough of.
As their reputation grew, so did their opportunities, allowing Big City Bites to expand its reach. They became regulars at community events like Kantoberfest, Jiggy with the Piggy, and set up their truck regularly at Old Armor Beer Company.
They even served the crew working on the construction of the Cannon Ballers stadium These opportunities not only showcased their delicious food but also helped Mike and Sharon connect with locals and build strong relationships within the community.
- When the opportunity arose to expand into the new food hall space on West Ave, the timing couldn’t have been better, and Big City Bites was ready to grow.
As the bistro transitioned from a food truck to a more permanent space, Mike and Sharon seized the opportunity to expand their menu. Now, with more space to work with, they continue to introduce new items while maintaining the signature dishes that have won the hearts of their customers.
For Mike and Sharon, Big City Bites Bistro is about more than just food; it’s about creating a place where people can gather and enjoy a good, sit-down family meal.
